     KQ Bacon Pie

 



Above: The easy-to-make KQ Bacon Pie is filled with bacon, onion, cheese and jalapeno.

 

Ingredients
1 pound thick cut applewood smoked bacon

1 yellow or white onion
1 jalapeno pepper
3/4 cup baking mix
1 cup milk
3 eggs
1 cup grated cheese
1/2 teaspoon salt
1 teaspoon black pepper

Utensils and Supplies
glass pie pan

rubber spatula
chef knife
measuring cups
measuring spoons
cutting board

metal or glass mixing bowls
cooking spray


Above: "Thick cut" bacon is recommended for this recipe.


Above: Use your microwave oven to cook the bacon.  Microwave the bacon in two batches to ensure even cooking.

Above: Remove the stem, membrane and seeds from pepper.  Chop into a 1/8 inch dice.  Place diced jalapeno
in a mixing bowl.  Pre-heat oven to 400 degrees.



Above: Remove skin and ends from onion.  Chop onion into a 1/4 inch dice.  Add to bowl with jalapeno.


Above: When the very crisp bacon has cooled following cooking, use a knife to chop up the bacon strips.



Above: Cut the bacon into 1/4 to 1/2 inch pieces.


Above: Add bacon bits to the bowl with the onion and pepper.



Measure 1 cup of milk.



Above: Crack three eggs in a small bowl and beat with a fork until whites and yolks are blended.


Measure baking mix into a bowl.  Add salt and black pepper.


Above: Add the eggs and the milk to the baking mix and whisk until blended.

 


Above: Coat a glass pie pan or baking dish with cooking spray.


Above: Add the bacon, onion and jalapeno to the baking dish.



Above: Pour the liquid mixture over the bacon and produce.



Above: The wet mix should cover all of the bacon and produce.



Above: Sprinkle the cheese on top of the pie.


Use a spatula or spoon and incorporate cheese into mixture.


Place the baking dish on the center rack of the oven.  Bake for 30 to 35 minutes at 400 degrees.



Above: Use a sharp knife to check if the pie is set.  Place the blade into the center of the pie and pull out.  If the blade
comes out clean, the pie is ready.


Above: Slices of KQ Bacon Pie can be served warm or at room temperature.  A dollop of sour cream on top and
a side of hash browns or a salad makes a great meal.
