     KQ Rustic Beignets - Deep Fried Fritter Style Donuts

Ingredients
3 cups flour

2 teaspoons sugar
1 teaspoon salt
1 tablespoon baking powder
1 cup water
1 cup milk
1 egg
pinch of nutmeg
1/2 cup confectioners (powdered) sugar (for coating)
vegetable oil (for deep frying)





Utensils and Supplies
deep fryer

frying basket
whisk
fork
tongs
sifter
small plate
grater
small scoop
measuring cups
measuring spoons
mixing bowls
paper towels
baking sheet
paper sack

Above: Preheat oil to 375 degrees.



Above: Lay out paper towels over a baking sheet.  This will serve as an area where excess oil can be absorbed when
the beignets come out of the fryer.



Above: Add flour to a sifter placed over a small plate.



Add salt and sugar to flour.



Add baking powder to dry ingredients in sifter.



Grate fresh nutmeg into dry ingredients.

Pour water into a mixing bowl.



Add milk.



Above: Crack egg into a small bowl and beat with a fork.



Add the egg to wet ingredients in bowl.



Whisk wet ingredients together.


Sift the dry ingredients into the wet ingredient bowl.


Whisk the dry ingredients into the wet ingredients.


Continue to whisk thoroughly until the batter is smooth and free of lumps.


Use a small scoop and drop the batter into the fryer.


Fry the beignets for 2-3 minutes, turning halfway through with tongs for even browning.


The beignets will be nice and golden brown when the frying is complete.


Remove the beignets from the fryer with tongs and place on the paper towel covered baking sheet.  Repeat the frying
process until all of the batter is used.


To cover beignets with powdered sugar, you'll need the sugar and a small paper sack.


Pour 1/2 cup of powdered sugar into the paper bag.  Place 2-3 beignets at a time inside the bag.  Fold the bag closed
and shake well.


Remove the beignets from the paper bag with tongs.  Repeat until all of the beignets are coated in powdered sugar.


Beignets are ready to serve.  Alternatives to powdered sugar would be to drizzle
Caramel Sauce over the beignets,
or perhaps
Chocolate Ganache.


Serve beignets while they are still warm for best flavor and texture.
