     KQ Chicken Salad Sandwich

   



Above: The KQ Chicken Salad Sandwich is easy and quick to make.  This recipe makes enough for 2-3 sandwiches.

 

Ingredients
1 baked or roasted chicken breast
3 sweet Gherkin pickles
1/4 cup diced white onion
1/2 cup mayonnaise
1/2 teaspoon salt
sliced bread

Utensils and Supplies
food processor
chef knife
cutting board
large spoon
large metal mixing bowl

Above: Place three pickles on a cutting board.


Above: Cut the Gherkin pickles into 1/2 inch pieces.


Add the sliced pickles to the food processor.



Above: Dice the onion.


Above: Add the onion to the food processor.



Above: Cut the chicken breast into 1/2 to 3/4 inch cubes.



Above: Add the cubed chicken to the food processor along with the salt.



Above: Place the lid securely on the food processor.


Above: Pulse the mixture a few times, then blend for about 1 minute on high speed.


Above: The mixture should be finely ground and well mixed together.



Above: Transfer the ground chicken mixture to a mixing bowl.


Above: Add the mayonnaise.


Above: Use a spoon and mix in the mayonnaise.  Continue to stir until all of the chicken mixture is evenly coated.


Above: Begin building the sandwich.  For this example, oatmeal bread is used.



Above: Spread a generous layer of the chicken salad mixture on one slice of bread.  (This recipe makes enough
chicken salad mixture for two to three sandwiches).


Above: Add the top slice of bread, cut the sandwich in two equal size pieces and serve.
