     KQ Roasted Carrots with Apple and Onion

   



Above: Roasted Carrots with apple and onion just after coming out of the oven.  This dish will please even those who are
not wild about eating vegetables.  Roasting and the addition of the apples provides a natural sweetness.

 

Ingredients
3 pounds carrots
1 medium yellow onion
3 apples
3 tablespoons extra virgin olive oil
2 tablespoons worchestershire sauce
4-5 dashes hot pepper sauce
1 teaspoon salt-free "table blend" spice
1 teaspoon finely ground black pepper

Utensils and Supplies
9x13x2" glass baking dish
measuring cup
measuring spoons
small whisk
spatula or large spoon
fork
canola cooking spray


Above: Carrots before peeling.


Above: Peel carrots.  Pre-heat oven to 350 degrees.



Above: Coat the baking pan with cooking spray.



Above: Cut the carrots into "coins" about 1/4 inch thick.



Place carrots in the greased baking pan.



Above: Peel onion and dice.



Above: Add onion to pan.


Above: Peel apples.



Above: Cut apples into 1/2 inch chunks.  Discard core.



Above: Add apples to baking pan.


Above: Add olive oil to a spouted measuring cup.


Above: Add worchestershire sauce.


Above: Add spice blend.


Above: Add black pepper.


Above: Shake in hot pepper sauce.


Above: Whisk ingredients together thoroughly.


Above: Pour mixture over the produce.


Above: Stir so the produce is evenly coated.


Above: Place baking pan on the center rack in preheated oven.


Above: Bake carrots for two hours, stirring after one hour and again after 90 minutes.


Above: When properly baked, the carrots will be soft enough that a fork will penetrate the produce easily.  Serve.
