     KQ Sausage Balls

 



Above: The KQ Sausage Balls are easy to make and a great choice for a party hors d’oeuvre or brunch buffet appetizer.

 

Ingredients
1 pound hot breakfast sausage

2 tablespoons bacon fat (or olive oil)
1 yellow or white onion
1 jalapeno pepper
1 1/2 cups pancake mix
1 1/4 cups grated cheese
salt
black pepper

Utensils and Supplies
medium size non-stick saute pan

baking sheet
rubber spatula
chef knife
measuring cups
measuring spoons
cutting board

10 inch metal or glass mixing bowl
1 1/2 inch scoop

Above: Remove stem, membranes and seeds from pepper.  Chop pepper into a 1/8 inch dice.  Preheat oven to 375 degrees.


Above: Add bacon fat to skillet over low heat.



Above: When bacon fat, (or oil), is heated add diced pepper.


Above: Chop the onion into a small 1/8 inch dice.



Above: Add the onion to the pan.  Add a dash of salt and black pepper.  Continue to saute vegetables, stirring occasionally,
until the onion is translucent.


When the vegetables are cooked, transfer from the pan to a mixing bowl.  Allow vegetables to cool slightly.



Above: Add sausage to the mixing bowl.


Measure cheese.


Above: Add cheese to mixing bowl.


Above: Add pancake mix to bowl.

 


Above: With clean, freshly washed hands, mix the ingredients together very well.


Above: When the ingredients have been well blended the mixture is ready to be shaped into balls.



Use a scoop to create evenly sized balls.



Above: Roll the balls between your palms to form compact spheres.



Above: Place 12-15 balls on an ungreased baking sheet.  This recipe will make 28-30 balls, so you'll need to bake them
in multiple batches.



Bake the sausage balls for 20-25 minutes, (depending on how crispy you want them to be), on the center rack of the oven.


Above: The sausage balls have been completely baked and are ready to serve.
